The All-Star Veggie Burger

I'm not a vegetarian & never will be, but this burger is pretty scrumptious.  Steven and I ate them while on a cleanse about a year back.  It was our source of protein and boy were they good and filling.  One key reminder: Make sure you smash the garbanzo beans really really well!

INGREDIENTS
1 (15 oz) can garbanzo beans, drained and mashed
8 fresh basil leaves, chopped (you can use dried if you need to)
1/4 cup quick cooking oats
1 cup cooked brown rice
(I highly recommend the pre-packaged brown rice at Trader Joe's.  It works great & takes only 3 minutes to cook in the microwave!)
1 (14 ounce) package extra-firm tofu
5 tablespoons barbeque sauce (honey, spicy, whatever you desire)
1/2 teaspoon
garlic salt
1/2 teaspoon ground black pepper
3/4 teaspoon garlic powder
3/4 teaspoon dried sage
2 teaspoons vegetable oil


DIRECTIONS
In a large bowl, stir together the mashed garbanzo beans and basil. Mix in the oat bran, quick oats, and rice; the mixture should seem a little dry.

In a separate bowl, mash the tofu with your hands, trying to squeeze out as much of the water as possible.
(I used a paper towel to really absorb all the water!)

Drain of the water, and repeat the process until there is hardly any water worth pouring off. It is not necessary to remove all of the water. Pour the barbeque sauce over the tofu, and stir to coat.

Stir the tofu into the garbanzo beans and oats. Season with salt, pepper, garlic powder, and sage; mix until well blended.

Heat the oil in a large skillet over medium-high heat. Form patties out of the bean mixture, and fry them in hot oil for about 5 minutes per side. Serve as you would burgers.

  1. yep. still broke. dumb apple! my faithful friend has been spazzing out lately. oh well. i am at my in laws checking emails and such now, that's all i really have time to do!

  2. this looks delicious! Better than a black bean veggie burger I've had before...

    We ate vegetarian for about a year, now we just don't eat a lot of meat, or rarely any red meat.

    My favorite veggie recipe is a wrap, made with spinach tortillas, rice, fresh spinach leaves, and saute'd zuchini, yellow squash, onion and garlic, and tossed with pesto sauce, and sprinkled with a little parmesan cheese. Super yummy, and can be changed many different ways depending on taste!

    This sounds so so good! I'll have to try this out sometime. I never thought of making a "hot wrap" of sorts. I'm now craving some zucchini!
