P90X - Day 2

DAY 2

Last night was killer! Plyometrics aka Jump Training = Squats, squats, and more squats along with some jumping included after the squats. My legs could do no more! Probably didn't drink enough water!

In no means am I at an athlete training level. But in all fairness to myself, I have been going to a workout class (bootcamp) 2x a week since May that incorporates a lot of the same moves and techniques. I sweat in that class like crazy and it never gets easier (I guess that's how you know it's working). Last night however, took me to an entirely different level. I have not sweat that much in years!

I've run a 1/2 marathon, I've done weight and cardio training for 5 months, but this Plyometrics workout, woooweee! It's going to be worth it though! I can feel it.

So, as for our dinner last night I made Chicken marinated in Honey Chile Sauce with Zucchini and Polenta. The honey chile sauce was a yummy recipe and part of the P90X diet! Here it is:


Honey Chile Marinade
Ingredients:
3/4 cup Honey (slightly warmed)
1 cup chicken broth (reduced salt)
1 tbsp chile powder (or chile pepper)
1 tsp cumin
1/3 tsp garlic salt
1/4 cup scallions
Pepper to taste
1/8 cup white wine vinegar (or add as much as you want to taste)

Directions:
Spray saute pan with cooking spray and saute scallions on med-high heat. Add honey and vinegar and mix. Add all spices quickly and stir quickly! Then add chicken broth and reduce by half.

Put mixture into blender or food processor and blend to make sure liquid is consistent. Pour over chicken breasts/tenders and marinate for 1 hour (or longer if you like). Then we grilled the chicken.
