Fish & Chips, Broccoli Slaw - Dairy Free Banana Pudding

I made these dishes a few weeks ago, but have just started to get caught up on blogging.  I'm working on something for future posts that has been taking my time. So I'm back!

Fish and Chips - This recipe came from an earlier post.  You can get the recipe for the fish and batter there. These were very tasty and flavorful! Finger lickin' good if I do say so myself.

Thai Broccoli Slaw - honestly, this was my own concoction and I loved it.  Steven was a little more iffy on it because he tends to prefer a sweeter tasting slaw. I'm not a big sweet slaw person, which is why I liked this one.

1 Package Broccoli Slaw
1/2 cup peanuts
1/4 cup Tofutti Sour Cream (you can use real sour cream if your fine with Dairy)
1/8 cup Mayonnaise (I tend to go on the lighter side with this)
1/8 cup Ginger Sesame Dressing (or any kind of dressing you prefer)
Salt & Pepper to Taste

Mix it all together! :)

Dairy Free Banana Pudding - this was so good and we actually put it in the freezer just to firm it up a bit! This recipe was taken from the Jello box and modified to make it Dairy Free.

3 Cups cold Almond Milk (You can use Soy, Coconut, Rice Milk or regular - the more fat the thicker the pudding)
2 packages Jello Vanilla Instant Pudding
30 Nilla Wafers (I used more!)
3 Large Bananas - sliced
1 Tub Cool Whip - Thawed

Make up pudding according to box directions
Layer ingredients like a truffle (Nilla Wafers, Pudding Bananas, Cool Whip - Repeat!)
