Baked Almond Apple French Toast Recipe

Baked Almond Apple French Toast. My stomach growls as I write this. This got eaten so fast I didn't even get a picture of the finished product.




Serves 4 

Ingredients
1 Loaf French Bread
4 Eggs
1.5 cups almond milk
4 Tbsp Sugar
1 Granny Smith Apple
Cinnamon, Sweet Nutmeg, Allspice
Pure Almond Extract
Vanilla Extract
Butter (You can sub margarine or natural balance spread)

Directions
Cube French bread (as small or as big as you'd like). You can see mine are about 2-3" cubes. Put in greased glass baking dish. Pack tightly so there isn't anymore room for the bread to move around.

Peel, then slice granny smith apples into thin strips - much thinner than an apple pie. Intersperse them with bread cubes and on top of bread.

In a separate bowl mix milk, 3 eggs, 1/2 Tbsp almond extract, cinnamon, sweet nutmeg and allspice (these spices are all to taste). I estimated mine. *Remember all are strong flavors, so a little goes a long way. Pour this mixture over bread. Refrigerate for 24 hours (THIS IS THE KEY!)


Pre-heat oven to 375 degrees. In a separate bowl melt - 4 Tbsp butter, 1 tsp vanilla extract, 4 Tbsp sugar and a pinch of cinnamon. Beat in 1 egg after the butter mixture has cooled a little bit (you don't want to cook the egg). Brush over the top of the bread/apple mixture coating all apples and bread as needed (you can pour too, but make sure all apples get a good covered)

Bake for 25-40 minutes, depending on the density of the bread and crustiness :)

Serve with turkey bacon and scrambled eggs. No syrup needed for this one!
