Tortilla Soup - Gotta be a Favorite!

I love anything Mexican Food related. You took me out of California, but I will always be part mexican I believe....I could literally eat it every single day. No joke. I'm never tired of it.

On Labor Day we hung with some friends and the menu for that evening was Chicken Tortilla Soup. Yum!

This recipe was modified a little bit by me by adding some extra ingredients, but this came from the Dear Mrs. Katie Green.

Ingredients


2-3 Boneless, Skinless Chicken Breasts (I used thighs and it worked just fine)
3 cups Chicken Broth
1 Cup water
2 Tbsp Mild Taco Seasonings (be sure to get McCormick brand because all other taco seasonings have MSG)
3-4 teaspoons cumin
2 tsp Garlic Powder
1 tsp Onion Powder
1-1.5 cups rice ( I used spanish rice)
1 can black beans (rinse and drained)
Half package frozen corn (heated first!)


Directions
In a crockpot, throw in chicken, chicken broth, water, taco seasoning, cumin, garlic powder, onion powder. Cook on low for 4-5 hours.

Add beans, rice and corn (heat in a pan before adding) for last 20 minutes.

Top with pepper jack cheese, avocado and/or corn strips (slice up corn tortillas and fry in vegetable oil)
